The owner and chef, Gregoire Guiot, has been working in the industry for over 25 years. Born in the Lorraine/Vosges area of France, Greg began his apprenticeship at age of fourteen, studying under world class pastry chefs in Auxerre and Paris. In the U.S., he refined his culinary skills, first in Chicago, then at the Acajou restaurant in Lexington, Kentucky, and finally in Louisville, where he worked in such fine dining establishments as the Brown Hotel, The Parisian Pantry and The Jefferson Club.
